Quick Chicken Tortilla Soup

1 onion diced

2 cloves of garlic

1 teaspoon cumin

1/2 teaspoon coriander

salt and pepper

1 store bought roast chicken

2 boxes of chicken broth

1 or 2 cans of black beans

1 can of rotel

1 can of diced tomatoes

A few bunches of tortilla chips smashed into bits

toppings: sour cream, shredded cheese, avocado, cilantro and more tortilla chips

  1. In a large pot saute diced onion. Once soft and translucent add garlic, cumin and coriander powder, salt and pepper.

  2. Add the rest of the ingredients and simmer over low heat for 40-minutes.
