
A spur of the moment made-up recipe that worked well. Writing and sharing the recipe so I don’t forget.

1 bag frozen Smelt (thawed out)

1 teaspoon each turmeric, chili powder, coriander and salt [you can add any spice mix of your choice, for example, Cajun would be tasty too]

1/2 cup of besan (chickpea flour) and 1 cup flour [rice flour would work too]

Combine the ingredients. The fish holds so much water that adding water isn’t necessary. In fact, you may need more flour for the batter to stick to the fish.

Shallow fry in vegetable oil or olive oil.
Serve hot sprinkled with lemon and salt. Dipping sauce of your choice.

Not sure what you meant by “one bag”, I had 400g so cut the flours in half. Also, mine did not seem that watery; spicy flour did not stick much. My husband like them.

Thank you for trying the admittedly loose recipe. It’s been a while so I’m not sure how big the bag of smelt was! One thing we could try to make the flour stick better is to first flour-dust the fish, and then dip into the batter? I’ll have to make this again soon and post an update. Thanks again for commenting! Also glad your husband liked the smelt.
